Tired of your traditional meat dishes? Learn how to bring game meat to your dining room table.

Let our Drysdale chefs introduce you to the world of game meat cooking. Even if you already cook with game meat, this course will give you inspiration for new dishes and flavour combinations.

In this course you will learn how to get the best results from game meats such as venison, wallaby and duck. You will also learn essential skills including meat selection and preparation for cooking, understanding food safety, and the dos and don’ts of game meats.

The course is split into two halves. In the first half, Drysdale chefs will demo and cook a selection of dishes for you to taste. In the second half, you will put on your chef’s hat and prepare and cook dishes for yourself – tasting included, of course!

At the end of the night, you will take home a game meat recipe pack.

This course is delivered over one night of three hours duration. You do not need to complete NONC0256A Homebased Game Meat Processing to attend.

On successful completion of this course, you will receive a Statement of Attendance.
