AMP30815 Certificate III in Meat Processing (Retail Butcher) is delivered Statewide for students under a contract for training registered with Skills Tas (Apprentice).   The training and assessment is undertaken on the job (supervised instruction in the student’s workplace) and also off-the-job (block release) at the TasTAFE Meat Processing Annex of the Drysdale South Campus which is located at the Royal Hobart Showgrounds in Glenorchy.

The duration of this course is based on fulltime employment – 48 months @ 38 hours per week or part time up to 72 months @ 20-25 hours per week for students who are completing the course on the job.   This qualification is generally achieved through a mix of block release training (of a maximum of seven weeks duration per year for three years), and assessment in the workplace.

This course can also be undertaken via school based employment over 72 months @ 2 days per week.

Within this course students will learn how to cut and trim meats into standard cuts, break up stock carcases and prepare for retail sale.

  • Workplace tools of trade,
  • Additional resources required from workplaces to support training for this qualification depend upon selected elective units chosen.

Outcome

Students who do not successfully complete the qualification will be issued with a ‘Statement of Attainment’ listing all successfully completed units.
